Step 1: Make Juke, Tender Chicken for Bodacious Fajitas

Great fajitas need great chicken. Here’s how to make it perfect every time:

Use boneless, skinless breasts – They cook quick and won’t get tough. Bone-in takes way longer.

Pound ’em thin – Helps ’em cook fast and absorb all the flavors. Lay between plastic wrap or foil and use a mallet or rolling pin to flatten to 1/2 inch.

Marinate in a fajita marinade – The lime juice and spices give it that classic taste. In a ziplock bag, mix:

  • 3 Tbsp olive oil
  • Juice from 1 lime
  • 1-2 Tbsp fajita seasoning (or try my homemade blend below!)

Homemade Fajita Rub

  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/4 tsp cayenne

Let that flavor soak in 15-30 mins – Any longer and the lime juice will toughen the chicken.

Pat chicken dry and sear – Drain excess marinade and blot with paper towels. This helps it sear nice. In a hot skillet with oil, cook 4 mins per side until browned and cooked through. Set aside and tent with foil.

There ya go – perfectly juicy, bold chicken ready for epic fajita building! The lime and spices take it up a notch.

Step 2: Caramelize Those Fajita Veggies Baby

Now for the fun part – caramelizin’ the onions and peppers until they’re sweet, soft, and got crispy browned bits. Here’s how:

Prep veggies – Peel and thinly slice 1 yellow onion. Core and slice 1 red and 1 green bell pepper into long strips.

Get skillet blazin’ hot – Keep pan over medium-high heat. Wants it nice and hot.

Cook onions first – Add glug of olive oil and toss in sliced onions. Let ’em chill 2-3 mins until browned on bottom.

Cook 7-10 mins – Keep stirring occasionally until onions are soft, sweet, and caramelized, about 7-10 mins.

Add bell peppers – Once onions looking good, throw in sliced peppers too.

Cook 5 more mins – Stir everything together 4-5 mins more until peppers are tender with nice charred bits.

Season generously – Right before they done, add big pinches of salt and pepper. Makes the flavors pop like fireworks baby!

Damn, these smell outta this world! Fajita time.

Step 3: Warm Up Them Tortillas and Build Your Fajita Dreams

Get your toppings and tortillas ready, ’cause fajita assembly time is now:

Heat dem tortillas – Warm each side right on the stove for 10-20 seconds until soft and lightly browned. Or wrap in damp towel and microwave 30-60 secs.

Slice that chicken – Cut the rested chicken into strips.

Reheat chicken in skillet – Add strips back to hot skillet with veggies just until heated through, 1-2 mins per side.

Build them fajitas! Take a warm tortilla and load it up with onions, peppers, chicken and any other fun toppings.

Fold and devour! Fold tortilla in half around everything and take a big ol’ bite of Tex-Mex heaven!

The combo of lime chicken, sweet veggies, creamy guac and zesty salsa in a warm tortilla is straight up perfection. Make sure ya got napkins handy!

Chef Tips for Next-Level Homemade Fajitas

Wanna take your fajitas from great to greatest of all time? Here’s some pro moves:

Use cast iron skillet – Gets crazy hot for epic sear and char.

Make extra chicken – Easy to throw on 2-3 extra breasts. Use leftovers for salads, sandwiches, etc.

Get creative with fillings – Steak, shrimp, mushrooms, cauliflower – sky’s the limit for fajita fillings!

Make a customizable fajita bar – Set up a taco bar-style station with fun toppings for people to DIY their fajs.

Add Mexican rice – Fajitas + cilantro rice is a match made in Tex-Mex heaven.

Take that fiesta outside – Fajitas just taste better outdoors! Fire up the grill or portable burners.

Whip up spicy margs – A crisp margarita is the ultimate fajita partner in crime.

Prep veggies and marinade early – Get a head start so dinner comes together fast.

Warm tortillas in oven – Wrap in foil and heat at 250oF until ready to eat.

Answering All Your Chicken Fajitas Questions

Got fajita questions? I gotchu:

What’s the best chicken to use? Boneless, skinless breasts cook quick and even. Avoid bone-in which takes longer.

Can I use thighs instead of breasts? You can, but trim excess fat and go boneless, skinless. May need slightly longer cook time.

Don’t have fajita seasoning? No prob! Use my homemade blend in the recipe. Or any taco seasoning will work.

Do I really need cast iron? It’s ideal, but heavy stainless steel will also do the job. Just get the pan real hot. Nonstick won’t brown as nice.

Can I buy pre-cut fajita meat? Heck yes! Look for thin sliced chicken breast labeled “for fajitas” to make your life easier.

How long does homemade fajita rub last? In an airtight container in a cool spot, it’ll keep 3-4 months.

Can I make bomb veggie fajitas? For sure! Sub sliced mushrooms, peppers, corn, beans, cauliflower for chicken. Season as usual.

How do I reheat leftovers? Reheat ingredients separately, or combine in skillet over medium heat to bring that fresh flavor back.
